MIDLAND, Texas (YourBasin) – Enjoy tacos de birria? Then you’ll have to try a pizzadilla de birria!
The Birria Man food truck, located at the Food Truck Alley on Wall Street, is recently new to the birria game. Owner Gabriel Lamothe-Cos and his wife have been in the food truck business for six months but selling birria for two.
“Before, I was working as a truck driver and because of COVID-19 I was laid off,” said Lamothe-Cos. “Then I had the inspiration to open a food truck. And, that was that. Between my wife and I, we had the idea and inspiration. Thanks to God, we had the ability to open and serve food.”
Joining me today, Jacob Sloan joins me to try their popular pizzadilla de birria.
Though I didn’t get the secret recipe, I do know the birria is cooked for about six hours making it tender and juicy. Stop on by and try one yourself!
