MIDLAND, Texas (Nexstar) – May is here and one of the biggest holidays known as Cinco de Mayo is just days away.
Often times it can be very hard to find a restaurant that fulfills ones taco cravings but Dos Compadres did the job and had us at tex-mex.
Second generation owner and chef Albert Zarate says the combination mixture of Texas and Mexico popularly known as ‘tex-mex’ was never an idea that the older generation could understand, but now its different.
“Us being tex-mex coincides with West Texas living and the whole Midland-Odessa eating experience is a big part,” says Zarate.
Dos Compadres is a family owned business that first opened in Midland 28 years ago by Zarate’s parents and uncle and shortly after their Odessa location opened up.
And to never forget the history of the restaurant a mural hangs to remember the founders.
“My mom she’s always been in the restaurant business she actually worked in this building when it used to be Guillies which was way longtime ago, says Zarate. “As a waitress so she was always in the restaurant business, they all got together and they said you know what we just gotta do it and they did it, it was definitely tough the first couple of years but after that it got going and it was good.”
Mexican cuisine has taken over the United States and so has the celebration of Cinco de Mayo, a Mexican celebration on the victory over the French.
“What’s funny to me about it is a lot of my help tell me its one of those things that’s actually celebrated here in the United States than is actually is back in Mexico, says Zarate.
Though Zarate is born in the United States as a second generation his full knowledge about Cinco de Mayo is very small, however he makes up for it by letting the food he cooks do all the talking.
“Some of the recipes are our own definitely but a lot of them kind of came from within,” says Zarate.
One of those dishes, their fajitas. And it is served two ways: chicken and shrimp or beef and shrimp.
“We are dealing with good quality meat its trimmed daily, its being freshly cooked to order as you order whenever you order its literally getting thrown on the grill,” says Zarate
Nothing is music to his ears than hearing compliments on how tasty and fresh his food is and on tops of having the restaurant passed down to him after his parents he is very hopeful that he can continue on the legacy.
“Hopefully we being the second generation, we just keep it going,” says Zarate.
Dos Compadres is accessible in both Midland and Odessa, while being open Monday – Saturday from 11am – 10pm.
