La Margarita owner aims to serve her community

Hispanic Heritage Month

ODESSA, Texas (Big 2/Fox 24) – La Margarita restaurant has been a Mexican food staple for a long time. For the last 28 years, Trina Morales has owned and operated La Margarita. At 73 years old, Moralez said the number one reason she still comes into work everyday is to serve her community.

“You know the restaurant business is a though business, it’s very very tough but you know so far it’s so good,” Moralez said. “It’s beautiful to be working with people, you have to love people to be happy.”

Every morning you will find Moralez in the kitchen with the rest of her staff, preparing all of her recopies from scratch. Moralez said her love for her customers and making them feel at home is what sets her apart from her competitors.

“I’m watching every plate that comes from the kitchen and be sure that the plate looks good and it’s beautiful,” Moralez said.

But Moralez also has a love for her employees. Mari Billings, who has been a waitress at La Margarita for 15 years, said she wouldn’t want to work anywhere else.

” It’s a family, it’s all a family, we are a family,” Billings said. “We have other employees that they’ve been here longer than me, a couple of them and, we’re just a family.”

La Margarita’s staff doesn’t just consider each other family, they consider all of the people who walk through their doors family as well.

“I have many customers now, they ask for me to wait on them,” Billings said.”You get to know alot of people and you keep friends, you make friends with your customers.”

As for Moralez, she hope La Margarita will leave behind her legacy. But for now, Moralez has no plans of putting up her apron any time soon.

“I’m going to keep it running until, I die.”
