Curbside Bistro makes a unique tailgate appetizer

Basin Bites: Big Game Edition

ODESSA, Texas (ABC Big 2 / FOX 24) – If you’re still thinking about what kind of food to serve at your tailgate, Alejandro Barrientos with Curb Side Bistro, as a great appetizer that’s easy and fun to make.

“This is a perfect tailgate appetizer, usually when you watch a game, you have people coming over, and there’s nothing but chips and queso and that can get pretty boring. So, we’re going to do some really, really cool appetizers that will kick up your party.”

“So we got some garlic butter and butter with herbs and garlic, some use Italian seasoning and some use dressing. The cheese, you can go as crazy as you want with the cheese. So, this is pepper jack cheese, mozzarella, and Parmesan cheese and pepperoni.”

“So, we want to just cut as deep as possible as we can inside, but not too much on the outside because we don’t want too many pieces on the outside falling out. So, now we got this diamond effect here. And what your going to be doing is grabbing the garlic butter, and you’re going to go all inside right here.

“This is where it gets interesting. You’re going to grab your cheese, and you’re going to stuff it into
all the little creases that you made. That’s why it’s so important to get those nice little wedges right?
Now we stuff it again now with the mozzarella. Here, is where it gets interesting, the pepperoni.”

You can do pepperoni, you can do mini pepperoni, you can do salami, you can sausage, you just do pure cheese or however you want it. This right here, you see it’s nice and heavy this is going to go in the oven 350 degrees.”

You see it’s cheesy but the bread is really crispy. You want that nice contrast, you don’ want all cheesy or that big blob.” It’s perfect I love this for game day, it’s super super easy and if you have kids, the kids would love doing this, just don’t give them the knife, just the cheese, and the butter.
